- Meal prepping on the weekends makes it easier to eat healthier, great-tasting food during the week at home. It’s a relief to simply turn on the oven or throw together pre-cooked ingredients to make your meal. When shopping at Shamrock Foodservice Warehouse, you can pick up everything you need, from fresh and frozen high-quality meats and seafood to a variety of produce, farm-fresh dairy, and more.
- Meal prep tips:
- Quantity: Food will be safe to eat within seven days if cooked properly but most meals are good (safe and tasty!) in the fridge for up to four days so a good rule of thumb is prepping five meals at a time.
- Don’t choose vegetables that will wilt or become soggy and when reheating, always opt for using the oven over a microwave if you can.
- Sheet pan recipes.
- We love a good sheet pan recipe because cooking and cleaning are easy. Once you start throwing everything you need for dinner onto one pan , the flavors come together in delicious ways and it becomes a favorite during the week.

Sheet Pan Chicken Fajitas

NOTE: The star of the recipe is chicken, but you could also try Beef Flank Steak or Pork Carne Asada along with your choice of either fresh veggies or our frozen Bountiful Harvest Fajita Vegetable Blend.
Ingredients
Fajita Seasoning:
- 2 tsp. Onion Powder
- 1 tsp. Garlic Powder
- 1 tsp. Cumin
- ½ tsp. Oregano
- ½ tsp. Paprika
- ½ tsp. Black Pepper
- ¾ tsp. Salt
For chicken and vegetables:
- 2 large boneless, skinless chicken breasts
- 1 medium red onion, thinly sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- Tortillas, sour cream, avocado, cilantro, and lime for serving (optional
Directions
- For the fajita season whisk together all of the fajita seasoning ingredients.
- For the chicken and vegetables preheat oven to 425 degrees.
- Season both sides of chicken breasts with fajita seasoning. Set aside.
- Arrange onion and peppers evenly on a rimmed sheet pan. Place seasoned chicken on top. Bake until chicken is cooked through and registers 165 degrees Fahrenheit in the largest part, about 22-30 minutes. Remove the chicken to a plate and rest for 10 minutes.
- If veggies aren’t cooked enough for your liking, you can bake them more while the chicken rests.
- Slice chicken and serve with veggies, tortillas, sour cream, avocado, cilantro and a squeeze of lime.
